Lutein | Natural yellow plant dye

Lutein is a natural yellow pigment (a carotenoid) extracted from alfalfa. Lutein can be found both as an excipient (colouring agent) with E number 161b and as an active ingredient in food supplements.

Only plants can produce lutein. In food, lutein is found in greatest quantities in carrots, cabbage, broccoli, maize and spinach.
